Dr. Shaw, a celebrated figure in nutrition, began her career as a dietitian at Roanoke Memorial Hospital in Roanoke, Virginia, in 1959. Continuing in her field, she later held appointments at Santa Barbara Cottage Hospital and the University of California, both in Santa Barbara, before becoming a research assistant and National Institutes of Health fellow at the University of Wisconsin-Madison.
Ten years into a very fulfilling career, Dr. Shaw began a second career in academia. Hired by the University of Missouri as an assistant professor in 1969, she worked her way up to full professor and associate dean. During her tenure on campus, she also coordinated the Nutrition Cluster, Food for the 21st Century Research Program. Finally, in 1989, she was taken on board at the University of North Carolina at Greensboro where she taught, conducted research, chaired the food and nutrition department and served as dean of the School of Human Environmental Sciences. She since retired in 2000.
Growing up on a dairy farm, Dr. Shaw began learning about food and nutrition long before she attended college. Realizing the significance of a good education, she went on to pursue a Bachelor of Science at the University of Kentucky in 1958. Soon after she followed with a Master of Science and Doctor of Philosophy at the University of Wisconsin-Madison in 1965 and 1969, respectively.
Involved in numerous civic activities throughout her career, Ms. Shaw was especially involved in her church. An elder at First Presbyterian Church in Columbia, Missouri, for nearly 15 years beginning in 1974, she has since served in the same capacity at two Presbyterian churches in Greensboro since 1992. Further, she has been active as a board member of her local YMCA for several years.
Dr. Shaw has been a member of several industry-related organizations. Some of these include the American Society for Nutrition, the American Board of Nutrition and the Academy of Nutrition and Dietetics. She has also been affiliated with several honor societies such as Sigma Xi, Phi Upsilon Omicron and Kappa Omicron Nu.
Dr. Shaw secured a research grant through the Nutrition Foundation between 1971 and 1973, the National Institutes of Health between 1972 and 1975 and the National Science Foundation between 1980 and 1983. She was honored with a Teaching Award from the Home Economic Alumni Association in 1981 and a Centennial Legacy Medallion from the University of Kentucky in 2007. A celebrated Marquis listee, Dr. Shaw has been featured in dozens of editions of Who's Who in America, Who's Who in Science and Engineering, Who's Who in the South and Southwest and Who's Who of American Women.
