Mr. Keating was inspired into the culinary arts by both his parents and their success as chefs. More importantly, his 'calling' allowed him to continue his family's legacy in the dining industry. Josh began his career working in his family's restaurants. The said experience led him to establish his own restaurant. Mr. Keating earned a Bachelor of Arts in advanced culinary arts and business management from Johnson & Wales University and a degree from Bauman College in the Holistic Chef program as he completed coursework in culinary arts, including nutrition and therapeutic cooking.
Hard work, a yearning for creative cooking, and a passion towards good healthy food led to much success as an Executive Chef at various hotels in San Francisco, and Santa Barbara California; culminating into his current position: The Executive Chef and owner of Stacked and Folded. At the restaurant, his ultimate venture, Mr. Keating supervises approximately 50 employees and maintains daily business operations including staff and customer safety, bookkeeping, labor, payroll, produce acquisition, and all financial operations. His core focus has always been on quality, of both the product, and the incumbent delivery, or experience of exceptional service for the consumer, their "guests" and the "staff"; all considered to be family of servers and the serviced.
Over the years, Mr. Keating has been incredibly proud of developing successful restaurants while also continuing to expand into multiple operations. With all his businesses, he is grateful to provide job security for his employees and their families. He is deeply focused and committed towards healthy, sustainable, and environmentally conscious businesses. Civically, he has been active in the Village of Winnetka, including the local farmer's markets and as a member of the Chamber of Commerce. Mr. Keating also volunteers with Habitat for Humanity and has donated food to frontline workers during the COVID-19 pandemic, through meal programs at local hospitals, elementary and high schools.
For his exemplary efforts in his career, Mr. Keating's restaurant has been consistently recognized as the Best Sandwich Shop over four consecutive years. He was also honored for the Best Girl Scout Cookie Competition on the West Coast with a seven-layer cookie bar. He attributes his professional success to passion, empathy, drive, determination, and dedication to his craft. Mr. Keating plans to extend his family of "Stacked and Folded" followers by creating more culinary experiences in more locations, and by welcoming more individuals to enjoy the fruits of his labor, engage in his passion for great food, and indulge in his creations be they "stacked" or "folded".
